It’s Halloween. It’s one of those nights you want to keep meal planning VERY simple because there are so many other things going on.
My gift to you on this holiday…
Five super easy recipes that are part of my family favorites.
1. Stuffed Shells (thank you Emily)
Ingredients: 1 pkg frozen spinach (thaw and drain), 1 cup cottage cheese, 1/3 cup parmesan cheese, 1/2 cup mozzarella, 1/4 tsp. garlic powder, and one package of jumbo shells.
Directions: Cook the shells, mix all the ingredients together, fill shells with the mixture and place in a baking dish. Cover with marinara sauce and bake at 350 degrees for 30 minutes.
2. Ceasar Pasta Salad (thank you recipe club)
Ingredients: Romaine lettuce, chicken cubes, garlic, anchoives, croutons, pasta (fusilli is my favorite to use for this recipe)
Directions: Cook pasta. In a pan add some olive oil, garlic, chicken cubes and cook. Add in the anchovies (chopped). Add mix to the cooled pasta. Throw in a bowl with romaine lettuce. Mix in extra olive oil if needed. I sometimes add in capers and lemon juice. I don’t use exact measurements for this one.
3. Pesto Pizza (thank you Danielle)
Ingredients: pizza crust, pesto, mozzerella cheese, shredded chicken, spinach (or any other topping, I like to add chia seeds to my pizzas)
Directions: spread pesto on crust, add toppings and cheese. Bake.
4. Fish Tacos (thank you Danielle)
Ingredients: tortillas, fish nuggets (I love Trader Joe’s) shredded cabbage, avocado cubes and special sauce.
Directions: bake nuggets. Make sauce by mixing 2 parts cocktail sauce with 1 part sour cream. Add everything to a warm tortilla.
5. Chicken and Broccoli Packs
(thank you Pinterest, I’ve adapted it to my own)
Ingredients: brown rice, raw chicken cubes (I will use leftover chicken from the previous night to make this too), broccoli cubes, cheese, bacon and ranch dressing.
Directions: I make bacon for breakfast the morning I am making this for dinner and prepare the meal in the morning. Put cooked brown rice on the bottom of a square piece of tin foil, then the chicken, add the broccoli, bacon bits about a Tbsp. of ranch dressing and some shredded cheese. Fold the tin foil and bake for 45 minutes at 350 degrees.
